Tarka daal:

Ingredients

Red lentil soaked 1 cup
Water 2 ½ cup
Salt 1 tsp
Crushed garlic 1 tsp
Turmeric ½ tsp
Ingredients to temper
Oil ¼ cup
Butter 1 tbsp
Onion chopped ½ cup
Cumin seeds 1 tsp
Green chilies chopped 2
Coriander leaves 2 tbsp
Chili powder ½ tsp
Tomatoes chopped 2

Method

In a pan add water to boil, add in salt, soak lentils, garlic and turmeric, cover and cook for 25 mins until lentils are soft and mushy, remove from heat, prepare baghaar. Heat oil and butter in a small frying pan, add the onion, cumin seeds, green chilies, fry for 5 mins until onions light golden, add in all the remaining ingredients, cook stirring for 5 mins until tomatoes are soft, remove from heat, add to the cooked daal, stir, cover tightly, cook for 5 mins before serving.

Fish and Shrimp Masala:

Ingredients

Shrimps 250 gm
Boneless fish 250 gm
Oil ½ cup
Butter 1 tbsp
Onion chopped 1 cup
Ginger garlic paste 1 tbsp
Tomato paste 3 tbsp
tomatoes boiled / pureed2
Grinded almonds 2 tbsp
Mace grinded ¼ tsp
Ground cumin roasted 2 tsp
Turmeric ½ tsp
Chili powder 1 ½ tsp
Allspice ½ tsp
Salt 1 tsp
Water 2 cups
Coriander leaves 2 tbsp

Method

Heat oil and butter in a pan, add chopped onion, fry until golden brown, add tomato paste, pureed tomatoes and grounded almonds, fry for 1 min, add all the spices, salt and also add in the prawns and fish, fry for 2 mins, add water, cover and cook for 10 mins, remove from heat, sprinkle with coriander leaves, serve with roti.


Balti murgh:

ingredients

Tikka boti 1packet
Oil ½ cup
Cumin seeds 1 tsp
Onion chopped 1 cup
Garlic crushed 1 tbsp
Salt 1 tsp
Allspice 1 tsp
Black pepper ½ tsp
Chili powder 1 tsp
Roasted & crushed cumin 1 tsp
Green chili chopped 1
Mushrooms sliced 1 cup
Baby corn 4 sliced
Zucchini sliced 2
Carrot sliced 1
Capsicum cut in cubes 1

Method

Cut the chicken into 1 inch cubes. Heat oil in a wok, add cumin seeds, fry for 30 seconds, add chicken, fry for another 5 mins, add in chopped onion, garlic, fry for 3 to 4 mins, add all the remaining ingredients except the capsicum, lower the heat, cook for 10 mins until vegetables are almost tender, stir in the capsicum, cook for just 3 mins until vegetable and chicken tender, but vegetable should be slightly crunchy, serve.

Dhuwan Dahi Gosht:
Ingredients For Curry:
Beef 1 kg
Salt to taste
All spice powder 1 tbsp
Onion 1 (finely chopped)
Tomatoes 6-8
Chili powder 1 tsp
Red chili flakes 1 tsp
Turmeric 1 tsp
All spice powder 1/2 tsp
Crushed fenugreek 1 tsp
Green chilies 6-8
karahi masala 2 tbsp
Ingredients for Yogurt:
Yogurt ½ kg
Coriander leaves (chopped)1 bunch
Mint leaves(chopped) 1 bunch
Green chilies (chopped) 4-6
Onion rings 2
Method:
boil beef with 2-1/2 cup of water with salt and all spice. Heat oil add chopped onion fry well. Add tender beef then add cumin and ginger garlic paste cook for 2 minute. Add ½ cup of potatoes mix well cover and cook for few minute. Peel of tomatoes skin and mashed well. Add all spices, salt, red chili powder, crushed red chili , turmeric, coriander, fenugreek, karahi masala and green chilies cook for 4 to 6 minute on high flame. Beef curry is ready. In bowl add ½ kg yogurt, chopped coriander, mint and onion ring mix well and keep aside. In serving dish add half beef curry then add yogurt mixture. Again pour beef curry then add yogurt mixture. Give a smoke of coal for 5 minute.



Bread Rolls:
Ingredients:
Bread 6 sliced
Chicken chunks 1 packet
Salt to taste
Black pepper 1 tsp
Crushed red chilies 1 tsp
Soy sauce 1 tbsp
Chili sauce 1 tbsp
Eggs 2
Bread crumbs as required
Cabbage (chopped) ½ cup
Capsicum (chopped) 1
Carrots (chopped) 1
Spring onion 2 tbsp
Chili garlic sauce 4 tbsp
Mayonnaise 4 tbsp

METHOD:
Fry chicken chunks in hot oil then add veggies and stir fry.
Add salt pepper, chili sauce and soya sauce and mix well.
Let it cool, now add chili garlic sauce and mayonnaise and mix well.
Cut the corners of bread and roll them. Add chicken mixture and fold them then dip into egg and coat with bread crumbs, Deep fry well.



Qeema Khara Masala:
Ingredients
Beef mince 1 kg
Salt to taste
Oil half cup
Ginger garlic paste 1 tbsp
Red chilies 1 tbsp
Tomatoes 2
Onion 2
Whole chili 5-6
Turmeric 1 tsp
Whole coriander 1 tsp
Cumin 1 tsp
Crushed red chilies 1 tsp
Black pepper 1 tsp
Yogurt 4 tbsp
For Garnish:
Ginger julienned for garnish
Green chilies for garnish
Coriander leaves for garnish
Fenugreek for garnish
Method:
heat oil add ginger garlic paste and cumin fry well. Add beef minced cook for 2minute. Add all spices then add onion and tomatoes mix well. Cover and cook for 6 minute. Add water and yogurt cook till mince is done. Decorate with garnish ingredients and serve.


Ras Malai:

Cheese Paratha:

Ingredients:

Paratha 1 packet
Cheese 1 cup
Tomato ketchup ½ cup
Oregano 1 tsp
Garlic chopped 1 tbsp
Basil leaves 1 tbsp
Clarified butter for frying
Olives as required
Capsicums as required
Onion as required
Tomato as required
Oregano 1 tsp

Method:
Fry the parathas and set aside. Then all ingredients assemble on paratha then bake for 1 to 2 minutes and serve it .



Achaari Dumpukht Aalu:

Ingredients:

Boiled potatoes 650gm
Chicken cube 1
Oil ½ cup
Fried onion ½ cup
Red pepper crushed 1tsp
Cumin 1tsp
Mustard seeds ½ tsp
Onion seeds ½ tsp
Fennel ½ tsp
Fenugreek seeds ½ tsp
Dried fenugreek 2tsp
Turmeric 1tsp
Salt 1tsp
Dried Mango powder 1tbsp
Yogurt 1cup
Green chilies, coriander as required

Method:
Mustard seeds, onion seeds , fennel and fenugreek seeds crushed .now fenugreek ,turmeric ,salt ,chicken cubes ,amchur powder ,finely cut green chili ,green coriander and crushed red chili mix .then do the hole in potatoes and fill the masala .after this heat oil and fry potatoes and cover with lid .now fried onion ,yogurt and cumin crushed with hand and add then cook till then water dry then stove off .



Fried Mutton Roast:

Ingredients:

Mutton pieces ½ kg
Fried onion ½ cup
Green chili pastes 1 tbsp
Yogurt 250 gram
Crushed red chili ½ tsp
Lemon juice 5 tbsp
Papaya paste 1 tbsp
Salt 1 tsp
Nutmeg, mace powder ½ tsp
Ginger garlic 1 tbsp
Oil 4 tbsp
All spice powder 1 tsp
Boiled mix vegetable as required

Method:
In mutton add ginger ,garlic and salt add and boil it .then heat oil and add mutton and mix then fry well then add all ingredients .after this add boil vegetables then grill for 10 minutes and serve it.



Sagodana Porridge Mix:
Ingredients:
Milk 1-1/2 liter
Boiled porridge 1 cup
Blended rice 1 cup
Sago seeds (boiled) ½ cup
Pistachios 100 gram
Cardamom powder ½ tsp
Sugar 1-1/2 cup
Whole dried milk 250 grams
Screw pine 1 tsp
Sterling silver leaves 4
Pistachios, almonds for garnish
Method
Add cardamom powder, pistachios and blended rice in milk and cook on slow flame for half an hour. When it gets thick then add sugar, whole dried milk Boiled porridge and sago seeds. Then turn off the flame add screwpine and take out in dish. Garnish with almonds, pistachios and sterling silver leaves.

Khajoor kay rolls :
Ingredients:
Dates 500 grams
Almonds ½ cup
Pistachios ½ cup
Coconut 1 cup
Cardamom powder 1 tsp
Method:
Remove the seeds from the dates and heat in oven for 2 minutes .now add almond, pistachios and cardamom powder mix and roll it .then garnish with dates and keen in freezer .when cool it then cut in to the pieces and serve it .


Mirch koftay :
Ingredients:
Beef Mince ½ kg
Medium chili large 10
Cottage cheese 1 cup
Salt 1 tsp
Ginger garlic paste 1 tbsp
Onion (medium) 3
Tomatoes (medium) 4
Roasted chickpeas 4 tbsp
Egg 1
Red chilli powder 1 tbsp
Coriander powder 1 tbsp
Fresh coriander ½ bunch
Oil ½ cup
Method:
In mince onion, ginger garlic paste, roasted chick peas and salt add and grind it .now egg mix well and keep in refrigerator .now cut mark on chilies and remove the seeds and fill the crushed cottage cheese then coat the chilli with mince mixture. then keep in refrigerator .in a pan heat oil and chopped onion fry till than golden brown now add ginger ,garlic ,red chili powder ,coriander powder ,salt and tomatoes mix and roast .when tomatoes tender then half cup of water add and cook till than boil and add the koftay after this cook on slow flame for few minutes and garnish with green coriander then serve it.


Halawa :
Ingredients:
Sugar to taste
Sesame seeds 2 cup
Cooking chocolate 6 tbsp
Pistachios (chopped) 6 tbsp
Green cardamom 6-8
Almond (chopped) 6 tbsp
Cream ½ cup
Walnut 4 tbsp
Method:
Sugar mix in sesame seeds .now mixture separate in 6 parts then serve with different flavor like serve with almond then second walnut flavor and pistachios as like serve with other ingredient.

METHOD:
Pan men oil dal ker piyaz ko golden brown ker len ab lehsan, adrak or hari mirchon ka paste dal ker bhoon len ab tomato or tamam masalay dal ker mix Karen or 2 se 3 minutes tak paka bhoon len ab tamam vegetable dal ker 2 se 3 minutes tak paka len ab ublay howay chawal dal ker zafran essence, foodcolor or oil dal ker dum per chor den.

Tomato slices 2 cups
Yogurt ¼ cup

Green chili julienned 3 - 4
Ginger julienned 1 tbsp
Fresh coriander chopped 1 tbsp
METHOD:
Ek bowl men soya ko garam pani men dal ker 15 minutes kay liye bhigo den den or phir mal mal kay kapray se chan len.
Ek karahi men oil dal ker garam Karen or lehsan, adrak ka paste dal ker bhoon len ab tomato or tamam masalay bhoon len jab masala bhun jae to soya, mirchen, adrak or dhaniya dal ker 1 se 2 minutes tak mazeed paka len.

Soya Chapli Kabab:
Ingredients:

Fine flour 1 tbsp

METHOD:
Ek bowl men soya ko garam pani men dal ker 15 minutes kay liye bhigo den den or phir mal mal kay kapray se chan len.

Cream of Potato Soup:
Ingredients:
Butter 2 tbsp
Garlic chopped 1 tsp
Carrot chopped 2 tbsp
Spring onion chopped 2 tbsp
Potato boiled & mashed ½ cup
Vegetable stock 2 cup
Cream ¼ cup
Salt as required
White pepper 1 tsp
Nutmeg powder 1 pinch
Thyme ¼ tsp
Oregano ¼ tsp
METHOD
Heat butter and sauté garlic. Add carrot cook for 1 minute. Add mashed potato and all spices cook for 2 to 3 minute. Add spring onion and cream, serve.

Crispy Corns:
Ingredients:
Sweet corn 1 cup
Rice flour ½ cup
Corn flour ½ cup
Salt as required
Chaat masala as required
Oil for frying
METHOD
Mix sweet corn, rice flour and corn flour in mixing bowl. heat oil and fry corn till crispy. Sprinkle salt and chaat masala, serve.

Pesto Rice :
Ingredients:
Rice boiled 1 cup
Fresh basil ½ cup
Garlic 1 tbsp
Oil ½ cup
Almond or pine nuts ¼ cup
Salt as required
Black pepper 1 tsp
METHOD
Blend all ingredients except rice, pesto rice is ready. Add pesto sauce in pan, add boiled rice mix well and cook for 1 minute. Turn off flame.

Tomato and Basil Chicken Curry:
Ingredients:
Chicken boneless cubes 1 cup
Oil ¼ cup
Onion chopped 2 tbsp
Garlic chopped 1 tbsp
Carrot chopped ½ cup
Tomato puree 1 cup
Fresh Basil leaves 8 to 10
Oregano ½ tsp
Thyme Leaves ½ tsp
Paprika powder 1 tbsp
Cumin powder 1 tsp
Sugar 1 tsp
Salt as required
METHOD
Heat oil in pan. Add onion or garlic sauté well. add chicken cook for 2 to 3 minute. Mix all ingrediens cover cook for 10 to 12 minute on low flame. When oil and gravy separate add pesto rice and serve.

Mixed Fruit Creamy Delight:
Ingredients
Cream 3 packets
Yogurt 1 cup
Pineapple 1 tin
Condense milk 1 tin
Pineapple jelly 1 packet
Orange chunks 1 cup
Grapes deseeded 1 cup
Bananas 7 to 8 sliced
Biscuits crumb 2 cups
Chocolate syrup to drizzle
Method: mix all the ingredients together n serve chilled


Tempura Prawns with Sticky Sauce:
Ingredients
Prawns 1kg
Vermicelli 1 packet
lemon juice 4tbsp
Salt 1tsp
Mustard paste 2 tbsp
Black pepper powder 1-1/2 tsp
White pepper powder 1tsp
Cayenne paste 1tbsp
Vinegar 1tsp
Brown sugar 1 tbsp
Garlic paste 1-1/2 tbsp
Eggs beaten 3
method mix all the above ingredients like lemon juice, salt, mustard paste, black pepper, white pepper, cayenne paste, brown sugar, vinegar n garlic mixed all well together n marinate for 10 min n after that each prawn dip in to eggs beaten den wrapped in vermicelli n deep fry them n serve with a tartar sauce
For Tartar Sauce:
Mayonnaise 1 tbsp
Cream 2tbsp
Black and white pepper a pinch
Salt a pinch
Chill garlic sauce 1 tbsp
Chopped parsley 2 tbsp
Gherkins 2
Chopped jalapenos 1
Mustard paste 1tsp
Mixed all together n serve with tempura prawns

Instant Bread Dahi Baray with Chicken And Chickpea:
Ingredients
Whole bread 1 packet
Yogurt 1kg
Onion finely chopped 1
Boiled chicken shredded 1 cup
Boiled chickpeas 2cups
Castor sugar 3 to 4 tbsp
Green chutney 1cup
Tamarind chutney 1/2 cup
Milk 1 packet
Ingredients for Green Chutney
Coriander leaves 1 bunch
Mint leaves 1 bunch
Salt 1 tsp
Green chilies 3 to 4
Tamarind paste 1tbsp
All mixed together n blend
For Tamarind Chutney
Tamarind 1 cup
Whole red chilies 4
Cumin roasted 1 tbsp
Salt 1/2 tsp
Roasted coriander 1 tsp
Mix all n blends
Method: cut the corners of bread make round shapes of bread and add green chutney, chicken and chopped onions on each bread. Make a sandwich. in a bowl add yogurt, castor sugar, milk 1 tetra pack, pinch of salt,1 tbsp chaat masala,1tsproasted cumin mix well. Now put bread sandwiches in to the yogurt and dip them well. Add in chick peas on the top serve with deep fried manda patti. Serve with tamarind and green chutney on the top. Sprinkle chaat masala.
